Crustless quiche

Ingredients

  • 1 cup chopped onion
  • 1 cup sliced fresh mushrooms
  • 1 tablespoon vegetable oil
  • 1 package (10 ounces) frozen chopped spinach, thawed and well drained
  • 2/3 cup finely chopped fully cooked ham
  • 5 large eggs
  • 3 cups shredded Muenster or Monterey Jack cheese
  • 1/8 teaspoon pepper

Directions

  • In a large skillet, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake at 350° for 40-45 minutes or until a knife inserted in center comes out clean.
You'll never miss the crust! We loved this easy quiche. Like some other reviewers, I used 6 eggs and added 1/3 cup of heavy cream. I omitted the ham because we wanted a meatless dish; next time I'll try it with the ham as well. I used a combination of sharp cheddar and monterey jack cheese since that's what I had on hand. Super delicious and versatile! I had it for breakfast AND lunch! Will keep this one handy and definitely make again!
I have made this quiche a few times. I used 6 extra large eggs, and 1/3c half and half. These changes seemed to give it a better texture. I had leftover ham and roasted veggies, which I added when I made it today. Bacon is also good in it. Frozen or fresh spinach can be used with good results. I use a combination of Swiss and Pizza Cheese. This is a great basic recipe and easy to add your own touches.I did not give a 5 star rating because I felt that the original recipe was a bit too dense in texture.
One of my new favorites! I use 1/2 cup onion and substitute 2 TBSP butter for oil. I have made this with variations of ham, bacon, breakfast sausage, or veggies only, using asparagus, mushrooms, and grape tomatoes. Delicious in any variation!
I love this recipe. It may not be the healthiest but it surely does taste great! It is so simple and easy and I am all about quick and easy!
Very easy recipe and delicious. I also used 8 eggs and added 1/3 cup of half and half. I had a little more than 3 cups of Mexican Blend cheese so I used it all. I’ll make this the next time with asparagus and bacon.
Excellent recipe ! So easy to make. Tastes delicious. Keeps very well. Just a small slice with a fresh green salad, like arugula with a few pine nuts and shaved parmesan, makes a very good and satisfying meal. Will keep in the fridge for a whole week.
One of the easiest quiche recipes I've ever made! So good you won't miss the crust! We enjoyed this at a brunch but then ate leftovers the next day for lunch. Will definitely make this often!
I make this quite often since it is easy and fast. We've had it for breakfast, lunch or dinner. I have changed up the cheese; sometimes part cheddar, or Swiss, or white cheddar, even Feta DELISH. Also sometimes add different vegetables with the spinach; such as red bell pepper, roasted artichokes. You have a lot of versatility with this recipe.
I found it very rubbery. Probably won't make again. Could not understand why there was no milk or half and half or cream in the recipe.
